It seems smbfs does not support SMB signing[1] and you should just use
cifs instead. mount.cifs is available in the smbfs Debian package and
the man page should give you all info on how to use it. (Or if
possible, disable SMB signing on Windows.)

The settings in smb.conf are for sharing stuff using Samba from the
Debian computer, not how to access the Windows stuff.
