Don't know exactly what you are looking for, but I like xgraphic which
is bundled with the xd3d contour app.  There is no Debian package for
it, but it compiled with no problem from their site.  I don't recall
the url, but googling under Linux gave it straight up.

It's a bit flakey in a few ways (particularly in placing labels on the
graph), but some of the flakiness can be worked out by pressing other
keys (like the grid key).  It has a few neat features (like linear
regression only on points visible in the window, so you can zoom in on
spots on a curve  and get the equivalent of a tangent--useful in
titrations.  ;-) and outputs ps files.  

If you try it, do it under /tmp to get used to how the output files are
created.
