I think that most distributions of SpamAssassin contain some test
messages - the easiest way to test SpamAssassin with these messages
is to use the sendmail emulation:
$ cat <messagefile> | sendmail <destination>
However, really testing the filters is hardly possible as the
bayes-filter (which is the most powerful of the collection) will
get better when the amount of real messages transferred increases,
so you'll probably have to use the system and monitor your spam folder...
