Normally OOo will detect that you are using gnome automatcially. If
this fails, try using OOO_FORCE_DESKTOP. To test:
OOO_FORCE_DESKTOP=gnome openoffice
If that works, you might want to uncomment the relevant line
in /etc/openoffice/openoffice.conf
