You have to create a link called xml2.pc not xml-2.0.pc since 
that's what it's looking for.

That's an "Eye" for Include. The header is in /usr/lib/glib-2.0/include
so you should include that directory. The GTK config scripts should pick
this up but for whatever reason they are not. It's hard to say without
seeing the configure.ac file.
