I'm partial to GAIM myself. It's another multiprotocol chat client (IRC, YIM, AIM, MSN-Messenger, and more). Only problem I'm having with it is an inability to figure out how to increase the font size, especially for the tool bar. I'm running at 1280x1024, and the fonts are so small, they can cause headaches.

For text mode, BitchX seems to be a pretty popular IRC client.
