Well my suggestions will fail that criteria

A combination of a cron job; logrotate; and cp. Some people use rsync.

Recursively backup a single directory, and insert symlinks to the
files you want to backup in this directory.

Hope this helps - a GUI tool may well exist but these simple tools
aren't too hard to combine.
