Edit /etc/network/interfaces

For DHCP:

auto eth0
iface eth0 inet dhcp

For static (change adresses and netmasks as appropriate):

iface eth0 inet static
       address 192.168.0.3
       netmask 255.255.255.0
       broadcast 192.168.0.255
       gateway 192.168.0.1

There are probably automated tools that will do this as well,
but I find it easier to just edit the file.

3) The opposite, if I have the machine configured with an specific IP
Address, how can I change it to use DHCP?
