You might find a thin-client solution to be the best/easiest. This way the clients merely function as an input/display device, and all the processing is done on the server. See the Linux Terminal Server Project (http://www.ltsp.org/) for more info.

If you want fat clients, you can still authenticate off the server, but I've never done it successfully (I've tried to authenticate off a Windows NT Domain server (nasty, but it's the network I'm stuck in)), but I think in your case LDAP might be the way to go. I'd suggest googling for "Linux LDAP authentication" for starters.
