Yeah, I tried that, but it has lots of build-depends on things that aren't in Woody (XFree86 4.2, for example). I don't want to upgrade my XFree86 just to build a wine deb.

From man dpkg-build-package:

-d     Do not check build dependencies and conflicts.

Maybae that will help.
