If you do not know anything more about the versions, basically,
the tradeoff you're getting goes from rock solid in stable, to some
serious bogosity from time to time in unstable.  I would not recommend
running unstable on a server unless you use it as your home system and
are used to what it can throw at you, and even then, the vast majority
of actually sane people would still use testing anyway.
