How the mail gets stored is of no concern to the MTA (sendmail, postfix,
etc.) - That is the job of the MDA.

The MDA shipped with sendmail (LMTP), does not support Maildir, but you
can have sendmail hand the delivery job to procmail, or other MDAs that
do support Maildir format.
