You do the 'make menuconfig' step before you compile with make-kpkg, as
you would with any other kernel compiling scheme, and you select your
processor while selecting the rest of your configuration.  make-kpkg
takes care of all the compile steps to make a Debian package, not the
configuration steps.

Actually it does do the configuration, it just uses 'make oldconfig' by default[which does nothing if you already have a complete config]. If you want to use another config method, there is the --config option to make-kpkg[see the man page].
