Try looking at this:

Particularly section 25.7.2. This is what I used to get 2 NICs working with no trouble (one from my cable modem, the other to my other box). There's lots of other info in that book too (I wish I had more time to study it!)
One thought: AFAIK, only one NIC should have loopback attached to it, and if you just copied the syntax from the first (with the loopback) and included a loopback for each, it might explain why none will start. But, I don't really know -- just a thought.

I don't have that either. It was probably a reference to some other distro's start up scripts, which seem to vary quite a bit.
