I suggest using a CD-booted system. If the operating system is on a
non-writeable medium, it's physically impossible to hack it -- just
boot the system after each customer.
CD drives are so cheap now, I'd be tempted to superglue the drive
shut. Seriously -- replacement cost is about $10 for IDE drives now.
I've heard good things about Knoppix.
