I must be not making myself clear here...

Chris Lale told me that he thought Waitrose might be using static DNS
addresses, quoting my original post, which he snipped just before the
bit where I said Waitrose were using static DNS addresses.

I re-set-up Waitrose earlier today following your suggestion of
undoing all the manual changes I'd made by following the
ISP-Hookup-HOWTO, and re-running pppconfig. Waitrose now works, and I
replied to the list to say you were a genius for your solution.

I then ran pppconfig again to create another connection for ukonline.
I did select 'Dynamic' in the 'Configure Nameservers' screen, but the
DNS lookup still doesn't work, although the ukonline connection works
otherwise. See my reply in which I said you were a genius for further
details.

Note: configuring ukonline did not screw up waitrose: the static DNS
lookup on waitrose still works. (Well, of course, this isn't Windoze.)
pon waitrose brings up a connection with static DNS where everything
works.
pon ukonline brings up a connection with dysfunctional dynamic DNS but
apparently working apart from that.
