The ESD (the sound daemon Gnome uses) sources include support for the
latest ALSA API (0.9), but the Debian package still uses the 0.5 API.
If you want to use the latest ALSA modules, you'll have to compile by
hand.

For xmms, see http://savannah.gnu.org/projects/alsa-xmms/ and
http://freesoftware.fsf.org/download/alsa-xmms/ (both refer to the same
software).
