How do I change the commands for C-c C-z v (view buffer in

M-x customize-variable browse-url-browser-function RET

No Match. :(...

Mine is currently set to browse-url-gnome-moz, though with the
default Debian install, I thought invoking mozilla at all would open
a new window in the same instance?

This depends. IIRC, if you use the old Netscape command line options, it starts a new browser instance. If you use the Mozilla options, it loads into the existing Moz window -- this also means that if Moz is not running, it will not load. Kind of funky.
