Having now done both, I can give a mildly intelligent reason:
 
The .deb package adds OpenOffice to the Debian apps menu, whereas the
tarball leaves you guessing as to how to invoke the program. 

The tarball tells you what to do to install, but did not put any new 
entries in my Gnome menus, and did not give me a clue as to what to
type at a command line to get it going after install.
