Here are the lines I have in my .muttrc to change the index_format:

## Index Format
folder-hook . 'set index_format="%4C %Z %{%b %d} %-18.18F (%4c) %s"
folder-hook =sent_* 'set index_format="%4C %Z %{%b %d} %-18.18t (%4c)
%s"

The 2nd line is for my sent mail folders so I can see who I sent it to
instead who it's from.
