you can turn that feature off if you like

follow symlinks = no

default is for yes

win32 has no real concept of symlinks(shortcuts arent anywhere
near what symlinks are). so building it into the server software
was probably needed. win32 is the dominant SMB platform..would
be curious as to how nfs client software on win32 reacts to
symlinks ..
