This sounds about right; it's what I did. I used the debian source packages (i2c-source and lm-sensors-source, as I recall).

You do need to disable i2c in the main kernel build.

I'm not sure what you mean by the phrase "outside the kernel". If you use kernel-package it's all set up to build kernel modules pretty automatically.
