Ah yes,

That one bit me too. It seems that installing those packages don't install
everything that is needed for a full Gnome desktop. 2 solutions: go over
the recommends: dependencies manually or use dselect. I believe I read
here that the package task-gnome-desktop has been phased out, but you
might consider trying that too.
