You could use a rewrite rule.  Add to the rewrite section of exim.conf
something like

    local@bogus        valid@example.com

and then all messages with local@bogus will rewritten to say they were
sent by valid@example.com.  Alternatively (or as well), get a ddns.org
or DHS domain name for your machine.
