The "Official" way is to use /etc/alternatives, I think.
$ls -l /usr/bin/cc
lrwxrwxrwx  1 root root 20 Dec  9 00:08 /usr/bin/cc -> /etc/alternatives/cc
$ls -l /etc/alternatives/cc
lrwxrwxrwx  1 root root 13 Mar 30 21:54 /etc/alternatives/cc -> /usr/bin/egcc

To change to plain gcc:
ln -sf /usr/bin/gcc /etc/alternatives/cc 

There is also a c++ there for g++/eg++.
