There are multiple solutions.
a) mailagent, a very powerfull mail handling package, can do
this with ease, but is probably overkill unless you already
use it, (you could also easily configure the frequency of
the replies, if needed, and have the full power of perl to
trigger whatever else you want).
b) procmail, though not as powerfull as the above, could
probably handle this (I don't know, I jumped to mailagent
ages ago).
c) You could use vacation, which is also quite flexible about
reply frequencies.
d) sendmail 8.7.x has a redirect directive in the alias file,
which can send mail back for any user. This is the
simplest to set up, if you already use sendmail, but is
rather simplistic, in that you can't have it send just one
message per day/week/whatever.
