dpkg-reconfigure locales

escoges tu localisation... (es_ES, es_ES@euro, etc...) y al fin, quando
te pregunta 

"Select default locale", dile es_ES

Nota : puedes forcar localmente tu terminal haciendo :

export LC_ALL=es_ES
