Das kann nicht funktionieren...

Entweder Du schreibst.

    EXCLUDES=$HOME/office,$HOME/music,$home/.gimp-2.0

oder Du schmeist alles in eine externe Datei "exclude"
und machst dann später:

<snip>

> BACKUPDIR=`date +%A`
> OPTS="--force --ignore-errors --delete-excluded --exclude-from=$EXCLUDES 

OPTS="--force --ignore-errors --delete-excluded --exclude-from=`cat exclude`

>       --delete --backup --backup-dir=/$BACKUPDIR -a"
