Ungewöhnlicher Wunsch, normalerweise freut man sich wenn Courier
überhaupt etwas loggt. 
In man couriertcpd steht exact welche Möglichkeiten du hast:

Zum Beispiel:
       -stderr=logfile
Set  program's  standard  error to the specified file,
logfile.  The file is created, if necessary, and is opened in append mode. 

Dies mußt du in dein Startscript unter /etc/init.d einpflegen.
