I do not really know, but

does. It is a bit cryptic, so use

http://bjorn.haxx.se/debian/

to get a more readable explanation. (If you just can't remember the address,
e.g. you are at a computer where you haven't access to your bookmarks, just
ask google: "why is x not in testing" :^) )

I suggest to go to

http://packages.debian.org/

and do a (substring) search, because the above site needs the exact package
name.

I haven't tested this, but you could download the source (.deb) packages
(i2c, too, I think) from unstable (use packages.d.o if you don't want to
change your sources.list, install them and build with (module-assistant [?])
a module package for your kernel.
