If you install the 'kernel-package' package, you have access to the same tools used by the Debian kernel maintainers for constructing installable kernel packages. 'kernel-package' includes a tool called make-kpkg that allows you to easily build a .deb of a custom kernel image, complete with any additional patches or modules you might want to apply. It works with any kernel source tree, regardless of whether or not it was shipped by Debian or not. Since tools like dselect and apt-get will never automatically replace your kernel, you are responsible for keeping it up to date.
