splitting nmap (Re: Bug#881639: nmap: Please ship ncat as a separate package)

I have had bad a really experience with making a package provide an
alternative for a name where the interface was not well-defined, so I'd
be really careful here. In my mind the alternatives system is broken for
all but the most trivial use-cases.

Perhaps it'd be a better idea to change the program/script that wants to
use a netcat implementation...
