splitting nmap (Re: Bug#881639: nmap: Please ship ncat as a separate package)

Hi Hilko,

I'd be happy to work on splitting the package and registering ncat as
an nc alternative if you're fine with that.  I haven't worked with the
alternatives system from the packaging side yet, so this is a chance
for me to work with something new :) .
