Having said that, for the future (not now), can't pocl Build-Depend on the unversioned llvm packages, such that pocl gets rebuild when the default changes? Or has that caused too much issues in the past?

pocl is tightly coupled to llvm and for support of a newer llvm version, a new pocl release is needed (which usually happens soon after an llvm release). (Compatibility with older llvm releases is kept for a few years.)
A B-D: llvm-dev (<< 1:16) would be the same as B-D: llvm-15-dev.
