The source package is -3, the binaries being complained about are
from -1; that makes them out-of-date.  Indeed:

 beast-doc |    1.6.2-1 | unstable/contrib | all

dak adds the arch:all packages to every packages file, so britney
seems them as out of date on every architecture.

Could you suggest any appropriate way to get rid of these packages which
should never have been there?  Filing another bug report to
ftp.debian.org to remove beast-doc, beast-examples in version 1.6.2-1
and only this version?

beast-examples appears to have been automatically removed last night, which only leaves beast-doc.

Should there be any version of beast-doc in unstable? Yes, you'd need to get ftp-master to remove the packages.
