Mucking with the environment variables as you suggest fixed my problem. Thanks! I have now compiled a PPC 64 kernel, but sadly do not have a G5 to try it on. :(

I noticed gcc uses the -m64 option when compiling the 64 bit things. When no -mXY is given does gcc default to -m32? I suppose I could find the answer in the docs somewhere.
