TL;DR: debuilder builds your package, but in a possibly dirty environment
(as it uses your system and everything which is installed). pbuilder uses
a chroot which is always up-to-date, avoiding there are not-declared Build-
Dependencies or not updated packages. If it builds there, is is likely that
it will also build on the official buildds.
(Some alternative is sbuild, which behaviour is even closer to the buildds:
https://wiki.debian.org/sbuild).
