use the dchroot command.  For example:

(base)jello@vore:~$ cat /etc/debian_version
3.0
(base)jello@vore:~$ dchroot sid
Executing shell in chroot: /org/vore.debian.org/chroots/user/sid
(unstable)jello@vore:~$ cat /etc/debian_version
testing/unstable
