If jackstart always _requires_ SUID root you should not use
dpkg-statoverride but ship it SUID in the deb.

And even if it oes not always require SUID root and you ask per
debconf you should (imho) use chmod instead of dpkg-statoverride, i.e.

      chmod 4754 .. chown
