But /lib/live/mount/overlay is empty. Is there somewhere else I can find the "cow"?

In case it matters, I'm using live-boot 3.0.1-1 (Ubuntu 13.10)

no, showmount was deprecated some time ago (and enable by default).
you'll see cow in /lib/live/mount/overlay or something like that.
