The debian-science list is not a whole desktop system. Have a look at
/usr/share/live/build/lists/debian-science. It only includes 'standard'.
That will not give you a desktop. You can specify multiple lists with
the --packages-lists option, e.g. "--packages-lists debian-science
lxde-desktop" should work and probably gives you something like what you
were expecting.

It appears to me that this is not possible using the online builder,
since the web page allows only one option for --packages-list.

Will entering "desktop" or "laptop" in the tasks box suffice to create a
whole desktop system?

I would say give it a try and report back to close thread or continue
dialog. Please know that "whole desktop system" is a bit open ended.
:)

Thanks.

Rather than try with the whole 3.1 GB debian-science package, I tried the following to see if it would create a working system:

http://live-build.debian.net/build/20110315.164918.390815150/

LB_BINARY_IMAGES="iso-hybrid"
LB_DISTRIBUTION="squeeze"
LB_PACKAGES_LISTS="standard"
LB_TASKS="desktop laptop"
LB_PACKAGES=""

It built an .iso, but the .iso just booted to a blank screen, so it looks like you can't build a working system with tasks alone.

Perhaps the web-frontend page should allow text entry for --packages-lists, like it does for --tasks and --packages, instead of a drop-down menu like it does for --binary-images and --distribution where the options are mutually exclusive.
