The problem seem to be that validate_string_db_input() in xserver-xorg.postinst
loops forever (it might need some attention) for the reason that
xserver-xorg.templates is missing the Default: entry for
xserver-xorg/config/monitor/default-identifier
It stops looping when an arbitrary default-identifier is added, though I haven't
checked if the package is correctly configured.
