The RandR extension in XFree86 4.3 and later supports this (resolution
switch and resize desktop to match) and there are toolbar doodads
(gnome-randr-applet) you can get that let you control the switch with a
few mouseclicks.

I used this on my old laptop, but it would only switch between 1600x1200
and 1280x1024 but that was a driver (or X config) issue - I know the
Vesa driver let me switch between 1600x1200 all the way down to 640x480.
