When demoing Linux technology, Knoppix is always one of my preferred tools because it is Debian based and because of the whole lot of software it comes with.
The jaw-dropping moment for me during a demo is always: "Please reboot your laptops from the network." People go crazy because getting to the same point with Windows tools requires days to setup.
Some have thought for a moment a virus got into their computers when an alien desktop appears on their machine. Even then, some are doubtful about their original install remaining untouched on the hard disk until they reboot from it and see their usual (and now terribly cranky and old fashioned) desktop. So yes, some of us use the terminal server still.
On another line of thought, have you considered something like the Knoppix CD version but for remastering only? Maybe not labeled Knoppix so the end-user will not download it expecting to get something useful out of it, something like "Knoppix-base for remasters only", so instead of pruning Knoppix, we remasterers would build over it. It does not need to be CD sized, just pure Knoppix!
