I must totally agree to what Fabian said! It is not easy. It might be
easier to take an already stripped down version, like DSL (Damn Small
Linux) or other and extend them with apt-get install. I guess that is
what you want?
Another possibility might be to do "dpkg --get-selections > file" on a
small version and knoppix, diff the files and remove the files mentioned
in the difference file, which can bee edited ba hand for special
programs.
The dependencies are not always correct. I once tried to remove kde* and
it removed too much, the system would have bee unusable. But it was an
"old" knoppix version.
