Sorry, maybe I'm just ignorant, but are these applications really doing
anything useful, that would justify removing about 20 Megs of other
programs from the CD?

What does it do?
Aren't there other similar applications on Knoppix?

Please recommend which software you think could be deleted without
complaints, to free space for these "beta" programs.
