One thing to check for regarding interrupts is, that your graphics card should 
not share an interrupt with anything else. I found that this sometimes causes 
trouble, like what you described.

On my board e.g. the topmost PCI slot shares the IRQ Line with the AGP Slot. 
Leaving that PCI slot empty cured some similar video related crashes here.

Check /proc/interrupts...
