I think its quite easy if you follow the steps in that excellent 4 part 
article at http://linuxworld.com/story/32735.htm

Its an easy step by step explanation on how to set up postfix, procmail and  
cyrus along with spamassassin on Woody.
The part about procmail is especially good because it explains sorting of 
emails to different folders or even mailboxes, which i guess is exactly what 
Peter needs.
