It is sensible to use javahelper and a jh_build override in your case and your use of debian/javabuild is also correct. Since the resulting jar appears to be only used in a private context for nixnote2, it is also correct not to install it into the public directory /usr/share/java but into /usr/share/nixnote2/java.
