1. No. Puoi restringere un certo utente (o un gruppo) in modo che possa accedere solo sftp e non ssh. Tua moglie però dovrebbe avere un account diverso dal tuo (magari in uno stesso gruppo così da poter dare i permessi in lettura al gruppo sui file).2. Non ho ancora capito se il PC di tua moglie è Windows o Linux, comunque. Nel secondo caso samba ha senso fino a un certo punto.

In trusted home networks NFS without encryption is the best choice on Linux for maximum performance. If you want encryption i would recommend SSHFS, it is a much simpler setup (compared to Kerberos), more cpu efficient and often only slightly slower than plaintext NFS. Samba/SMB is also not too far behind, but only really makes sense in a mixed (Windows/Linux) environment.
